Slow cooker creamy tomato chicken

Ingredients

  • 1-1.5kg chicken pieces (I used a mixture of drumsticks, wings, thighs)
  • 1 onion, diced
  • 2 stalks celery, sliced
  • 40g sachet chicken noodle instant soup mix
  • 400g can diced tomatoes
  • 300ml cooking cream (see note)
  • 1 tbsp crushed garlic
  • 1 tbsp cornflour
  • Cooked rice, to serve

Method

  • Step 1
    Place chicken in a slow cooker. Top with onion and celery.
  • Step 2
    Combine all other ingredients in a jug or bowl and pour over chicken.
  • Step 3
    Cook on low for 6 hrs or until chicken is cooked through and tender.
  • Step 4
    Serve chicken on rice.
Recipe Notes

Note

Cooking cream is a specific type of cream that resists splitting when cooked over long periods. You can buy it with cold creams or long-life shelf varieties.
