A stir fry that's a lot healthier than the fried, take out version.
Ingredients
- 400 g chicken breast fillet diced
- 1 Spanish onion chopped medium
- 1 canola oil spray
- 220 g canned pineapple
- 2 tbs soy sauce
- 2 tbs white vinegar
- 1/2 cup tomato sauce
- 2 tbs white sugar
- 2 tsp cornflour
- 1 red capsicum diced medium
- 1 green capsicum diced medium
- 1 carrot large sliced
Method

Step 1Spray wok with oil and heat.

Step 2Soften onion then add chicken, cook thoroughly. Remove from pan.

Step 3Spray wok with oil again, heat and add vegetables.

Step 4Cook for 5 minutes or until soft.

Step 5Meanwhile combine cornflour, vinegar, sugar, soy, tomato sauce and pineapple (including juice).

Step 6Return chicken to pan, followed buy pineapple mix.

Step 7Stir and cook for 2 minutes or until heated through.

Step 8Serve with rice.
