A quick and simple peanut sauce.
Ingredients
- 1 tbs oil
- 1/2 tbs curry paste
- 425 coconut milk
- 325 g crunchy peanut butter
- 1 tsp sugar
- 1/2 tsp salt *to taste
Method

Step 1Heat oil in a thick based saucepan.

Step 2Add curry paste and heat for two minutes until flavour is released.

Step 3Add coconut milk and mix until curry paste dissolves.

Step 4Mix in peanut butter in increasing quantities until sauce reaches the desired consistency.

Step 5Add sugar and salt.

- 1 saucepan
Recipe Notes
You can either make this separately and refrigerate until you need it, or you can pre-cook chicken or beef and mix it through at the end and serve immediately. I prefer Massaman curry paste and cooking oil.
