Ingredients

  • 1 tbs oil
  • 1/2 tbs curry paste
  • 425 coconut milk
  • 325 g crunchy peanut butter
  • 1 tsp sugar
  • 1/2 tsp salt *to taste

Method

  • Step 1
    Heat oil in a thick based saucepan.
  • Step 2
    Add curry paste and heat for two minutes until flavour is released.
  • Step 3
    Add coconut milk and mix until curry paste dissolves.
  • Step 4
    Mix in peanut butter in increasing quantities until sauce reaches the desired consistency.
  • Step 5
    Add sugar and salt.

Equipment

  • 1 saucepan
Recipe Notes
You can either make this separately and refrigerate until you need it, or you can pre-cook chicken or beef and mix it through at the end and serve immediately. I prefer Massaman curry paste and cooking oil.
