A typical Italian style snack which is really easy, quickly made and yet very tasty.
Ingredients
- 1 baguette sliced
- 2 tbs butter
- 230 g mozzarella fresh sliced
- 10 cherry tomato quartered
- 1 bunch fresh basil small
- 2 tsp extra virgin olive oil
Method

Step 1Preheat oven to 190C (170C fan-forced).

Step 2Cut baguette diagonally into approximately 15 cm thick slices, butter on both sides.

Step 3On high heat, toast the bread using a skillet or fry-pan on the stove top, then set aside on a flat baking sheet lined with lightly lubricated foil.

Step 4Pulse mozzarella, some of the tomatoes and basil in a food processor, retaining some whole basil leaves.

Step 5Season with salt and pepper and just a teaspoon of olive oil.

Step 6When bread is toasted, top each slice with the mixture and place on the baking sheet, add quartered cherry tomatoes to each.

Step 7Bake for approximately 10 minutes, until cheese has melted and browned, then place on serving plates and allow to cool for a short while before serving.

Step 8Garnish with fresh basil leaves, add salt and pepper to taste.

Recipe Notes
You can also drizzle with a little extra virgin olive oil as well.
