Ingredients

  • 1 baguette sliced
  • 2 tbs butter
  • 230 g mozzarella fresh sliced
  • 10 cherry tomato quartered
  • 1 bunch fresh basil small
  • 2 tsp extra virgin olive oil

Method

  • Step 1
    Preheat oven to 190C (170C fan-forced).
  • Step 2
    Cut baguette diagonally into approximately 15 cm thick slices, butter on both sides.
  • Step 3
    On high heat, toast the bread using a skillet or fry-pan on the stove top, then set aside on a flat baking sheet lined with lightly lubricated foil.
  • Step 4
    Pulse mozzarella, some of the tomatoes and basil in a food processor, retaining some whole basil leaves.
  • Step 5
    Season with salt and pepper and just a teaspoon of olive oil.
  • Step 6
    When bread is toasted, top each slice with the mixture and place on the baking sheet, add quartered cherry tomatoes to each.
  • Step 7
    Bake for approximately 10 minutes, until cheese has melted and browned, then place on serving plates and allow to cool for a short while before serving.
  • Step 8
    Garnish with fresh basil leaves, add salt and pepper to taste.

  • 1 frying pan
Recipe Notes
You can also drizzle with a little extra virgin olive oil as well.
