Cook your pasta until it is just al dente and reserve ¼ cup of cooking water to mix in with the creamy pasta mixture at the end. The pasta water contains starch from the pasta and will thicken the sauce and help it cling to the pasta.
It’s important to remove the pan from the heat before stirring in the egg yolks so that the egg has a chance to combine with the mixture instead of cooking in clumps.
In my opinion, a carbonara can never have enough freshly cracked black pepper or parmesan cheese, so feel free to ignore the weights in the ingredient list, and be liberal when serving!

- 500 g bacon rashers diced
- 600 ml Woolworths Thickened Cream
- 3 tbs parmesan cheese
- 4 egg yolks
- 1/2 tsp salt and pepper *to taste

Step 1Lightly fry bacon in a large pan and season with salt and pepper.

What other ingredients can I add to this pasta carbonara?
A personal favourite of mine is to fry sliced flat mushrooms and finely chopped garlic with the bacon. This adds loads of flavour to the dish and bulks it up. Some people also like to add baby spinach (stir this in right at the end so the leaves just wilt) and swap the bacon for pancetta or leftover leg ham.
