This simple recipe uses custard powder instead of a pastry cream so that you don't need to waste ingredients. The all-butter puff pastry creates a delicious and crumbly crunch that is perfect served with a cuppa. - Lindy Lawler

Ingredients

  • 2 sheets all-butter puff pastry
  • 2 tbsp custard powder
  • 1.5 cup milk
  • 2 tbsp sugar
  • 1/2 cup raisins
  • 1/3 cup apricot jam
  • 2 tbsp hot water

Method

  • Step 1
    Preheat oven to 190 C.
  • Step 2
    Soak the raisins in hot water for 15 minutes. Strain and pat them dry, then set aside.
  • Step 3
    Make the custard by mixing milk, custard powder and sugar in a small bowl. Ensure the custard powder has dissolved before adding the mixture to a small saucepan for 5 minutes or until the custard has become very thick. Remove from the heat and allow to cool completely in the fridge.
  • Step 4
    Lay a sheet of pastry on a cutting board and spread with cooled custard. Sprinkle with raisins. Using a pizza cutter, slice the pastry in 8 strips per sheet. Beginning at the end of the each strip, roll the pastry up until it forms a scroll. Then, lay this over another strip and roll it up again. Two strips should create one scroll.
  • Step 5
    Lay the scrolls on a sheet of baking paper on a baking tray and bake in the oven for 30 minutes. Towards the end of the baking, warm the apricot jam with the hot water. Once you remove the scrolls from the oven, spread with the warmed jam. Serve immediately.
Recipe Notes

You may not need all the milk to make the custard. You want to make a thick custard that can spread like heavy whipped cream.
