Ingredients

  • 200g dark chocolate
  • 200g unsalted butter
  • 1 tsp vanilla essence
  • 1 3/4 cups brown sugar
  • 4 eggs
  • 1 1/2 cup plain flour
  • 1/2 cup cocoa
  • Pinch salt
  • 1 punnet Fresh raspberries
  • 100g white chocolate
  • 150g Easter Eggs - variety

Method

  • Step 1
    Preheat oven to 160 degrees.
  • Step 2
    Grease a rectangle baking pan (approx. 22 x 33cm) and line with baking paper.
  • Step 3
    Place the butter and chopped chocolate in a heatproof bowl over simmering water, ensuring the bowl does not have contact with any water. Continuously stirring, melt the two together. Take off the heat.
  • Step 4
    Add vanilla essence and brown sugar and pinch of salt to the chocolate mix and mix well.
  • Step 5
    Lightly beat eggs and add to mixture one a at time.
  • Step 6
    Sift flour and cocoa into the mixture to combine.
  • Step 7
    Pour into a prepared slice pan. Scatter raspberries over the top, slightly pushing into the mixture.
  • Step 8
    Bake in the oven for 30 minute. Remove from oven and place on cooling rack.
  • Step 9
    Once cooled, melt white chocolate and pour over the top of brownie and as decoration arrange Easter eggs to your liking.
  • Step 10
    Leave for chocolate topping to set Easter eggs in place.
