Ingredients

  • 500g tub Greek yoghurt
  • 125g Icing sugar
  • 2-4 strands of saffron
  • 2 tbsp warm milk
  • 8-9 pistachios, crushed
  • 1/2 tsp cardamom

Method

  • Step 1
    Place Greek yoghurt in strainer over an empty bowl to drain the excess water (you can strain this for 6 hours or overnight in the freezer). Remaining yogurt should be thick.

  • Step 2
    When the yoghurt is fully strained, remove the strainer and place the yoghurt into a bowl. Use a whisk to whisk it into a smooth consistency. It should be creamy and smooth in texture.
  • Step 3
    Add icing sugar into the bowl and mix it well.
  • Step 4
    Add cardamom powder to the bowl.
  • Step 5
    Meanwhile in a small bowl, mix the saffron and warm milk. Add it very slowly to the yoghurt mixture.
  • Step 6
    Add crushed pistachios into yogurt mix, leaving some aside for garnishing. Mix yoghurt and pistachios well.
