These are tasty and are good for snacks.
Ingredients
- 125 g butter
- 1/2 cup sugar
- 1 egg
- 2 cup plain flour
- 1 tsp baking powder
- 250 g raspberry jam
Method

Step 1Cream butter and sugar until fluffy, add egg and stir well.

Step 2Sift flour and baking powder together. Mix sifted ingredients into mixture.

Step 3Turn out onto a floured surface and knead well.

Step 4Roll out to 4 mm thickness. Cut out rounds using a 7 cm scone or biscuit cutter.

Step 5Make a small hole in the centre of half the biscuits.

Step 6Place on greased oven trays and bake at 180C for 10-15 minutes.

Step 7When cold sandwich together with raspberry jam, placing the holed biscuits on top.
