Ingredients

  • 500 g beef mince
  • 1/2 red capsicum diced
  • 1 onion diced
  • 1 carrot cubed
  • 1 cup frozen peas
  • 1 cup pumpkin thin slices *to taste
  • 40 g chicken noodle instant soup
  • 1 beef stock cube
  • 2 cup potato mashed
  • 1 cup cheddar cheese grated
  • 1 pinch all purpose seasoning *to taste
  • 1 cup water

Method

  • Step 1
    Fry onion and mince until browned.

  • Step 2
    Add vegetables, stock cube, water and chicken soup and simmer for 1 hour. If needed thicken with gravy. flour.
  • Step 3
    Pour mince mixture into an oven proof dish and top with creamy mashed potato
  • Step 4
    Sprinkle with seasoning and grated cheese.
  • Step 5
    Bake at 220C for 20 minutes or until cheese is melted and browned.
Recipe Notes

My friend made this for me when I broke my foot 7 years ago and it is still my favourite. It is the only shepherd's pie I make now and the kids love it too.
