The best shepherd's pie in the world!
Ingredients
- 500 g beef mince
- 1/2 red capsicum diced
- 1 onion diced
- 1 carrot cubed
- 1 cup frozen peas
- 1 cup pumpkin thin slices *to taste
- 40 g chicken noodle instant soup
- 1 beef stock cube
- 2 cup potato mashed
- 1 cup cheddar cheese grated
- 1 pinch all purpose seasoning *to taste
- 1 cup water
Method

Step 1Fry onion and mince until browned.

Step 2Add vegetables, stock cube, water and chicken soup and simmer for 1 hour. If needed thicken with gravy. flour.

Step 3Pour mince mixture into an oven proof dish and top with creamy mashed potato

Step 4Sprinkle with seasoning and grated cheese.

Step 5Bake at 220C for 20 minutes or until cheese is melted and browned.
Recipe Notes
My friend made this for me when I broke my foot 7 years ago and it is still my favourite. It is the only shepherd's pie I make now and the kids love it too.
