This recipe is super easy and tasty. It is great served as a side to barbecue or packed to take on a picnic. It keeps well in the fridge and is very popular with children.
Ingredients
- 250 g couscous
- 250 g corn cob kernels cooked
- 250 g peas cooked
- 1/2 cup pickled cucumber
- 1/4 cup capsicum diced
- 1/4 cup parsley finely chopped
- 1/4 cup fresh dill chopped
- 2 tbs mayonnaise
- 2 cup Greek yoghurt
- 2 tbs olive oil
- 1 lemon juiced
- 1 pinch salt *to taste
Method

Step 1Cook couscous according to packet directions. Drain excess water and wash with cold water. Set the couscous aside to cool.

Step 2Add remaining ingredients and stir to combine. Serve as a side with most meals.
Recipe Notes
This recipe is inspired by the traditional "Russian Salad," which would include boiled potato instead of pasta. While the shape and texture of couscous pasta is the hero of this dish, any available pasta may be used if couscous pasta is not available. Canned peas and corn may be used (drain the liquid).
