Seafood Pasta Salad

Ingredients

  • 250 g rollini pasta
  • 2 tbs olive oil
  • 500 g seafood mix
  • 250 g cherry tomato halved
  • 12 kalamata olives
  • 4 spring onion

Dressing

  • 1/2 cup olive oil
  • 2 tbs white balsamic vinegar
  • 1/4 cup parsley chopped

Method

  • Step 1
    Prepare pasta as per instructions on pack. When cooked, transfer to a large bowl.
  • Step 2
    Meanwhile heat oil in a large frying pan, cook seafood in batches.
  • Step 3
    When cooked add to pasta with tomatoes, olives and spring onions.
  • Step 4
    Toss gently.
  • Step 5
    Mix dressing ingredients and and toss through pasta.
  • Step 6
    Serve.

  • 1 saucepan
  • 1 bowl
  • 1 frying pan
Recipe Notes
I have added a can of diced tomatoes and served this hot as well. I have also just used frozen seafood mix. Use seafood marinara mix.
