A pasta salad that is great cold or is wonderful heated up.
Ingredients
- 250 g rollini pasta
- 2 tbs olive oil
- 500 g seafood mix
- 250 g cherry tomato halved
- 12 kalamata olives
- 4 spring onion
Dressing
- 1/2 cup olive oil
- 2 tbs white balsamic vinegar
- 1/4 cup parsley chopped
Method

Step 1Prepare pasta as per instructions on pack. When cooked, transfer to a large bowl.

Step 2Meanwhile heat oil in a large frying pan, cook seafood in batches.

Step 3When cooked add to pasta with tomatoes, olives and spring onions.

Step 4Toss gently.

Step 5Mix dressing ingredients and and toss through pasta.

Step 6Serve.

- 1 saucepan
- 1 bowl
- 1 frying pan
Recipe Notes
I have added a can of diced tomatoes and served this hot as well. I have also just used frozen seafood mix. Use seafood marinara mix.
