This is my Mum's old recipe for lactation biscuits. They are delicious and also great for breastfeeding mums to help improve milk supply. Mum made them for me when I was a new mother and they were so helpful. Now I make them for family and friends as small gifts when visiting a new breastfeeding mum and bub.
Ingredients
- 1 cup butter, room temperature
- 1 cup firmly packed brown sugar
- 1 cup caster sugar
- 4 tbsp water
- 2 tbsp flaxseed meal
- 2 eggs
- 1 tsp vanilla extract
- 3 cups flour
- 3 cups oats
- 1 tsp baking soda
- 1 tsp salt
- 4 tbs brewers yeast
- 1 cup white choc chips
- 1 cup dried cranberries
- 1 cup chopped macadamia nuts
Method
-
Step 1Preheat oven to 190°C. Mix the flaxseed meal and water and let sit for 5 minutes.
-
Step 2Beat the butter, sugar and brown sugar with an electric mixer. Add eggs and mix well. Add flaxseed mix and vanilla, beat well.
-
Step 3Sift together flour, brewers yeast, baking soda, and salt. Brewers yeast. Add dry ingredients to butter mix. Stir in oats, dried cranberry, white chocolate chips and roughly chopped macadamia nuts.
-
Step 4Scoop tablespoon sized balls onto baking sheet. Makes up to 54 biscuits depending on how big you make them. Squash slightly.
-
Step 5Bake until golden brown for ~15 minutes at 190C or slightly longer if you’ve made bigger biscuits. Let sit for a 5 minutes then remove from tray and cool on a wire rack.
Recipe Notes
These biscuits are so tasty that the family often eats them too, so I make a batch without the brewers yeast for them too.
