Very soft and delicious.
Ingredients
- 600 g pork mince
- 3 eggs
- 250 g Emmental cheese shredded
- 150 ml thickened cream
- 1 tsp ground caraway seeds
- 2 cups plain flour
- 3 cups fresh breadcrumbs
- 1 1/2 cups vegetable oil for frying
- 100 g unsalted butter
- 3 pinches sea salt
- 3 pinches black pepper
Method

Step 1In a bowl mix together pork mince, egg, shredded cheese, thickened cream, salt, black pepper and caraway seeds. Leave in fridge for about 30 minutes or overnight.

Step 2Using measuring cups with 1/2 cup capacity, wet cups with cold water and fill up with the mixture. With wet hands create schnitzel patties. Cover with flour, dip in 2 eggs, lightly beaten, and then in bread-crumbs. Repeat with remaining mixture.

Step 3Heat oil in frying pan over medium heat, add butter and when melted put the schnitzel in and fry slowly on both sides until golden brown. Leave on paper towel for few minutes take the extra oil, and then put them into round food thermos to keep warm and juicy.

Step 4Serve with home made wedges and vegetable salad or gherkins.

If you make the patties bigger they can become pork burgers.
Tips to convert this recipe to cook in an air fryer
At step 3 brush with melted butter and place in the airfryer basket and cook until golden.
