A healthy frittata recipe.
Ingredients
- 125 g potato diced peeled
- 75 g sweet potato diced peeled
- 1 tbs olive oil
- 1 onion medium peeled thinly sliced
- 1 red capsicum cored diced seeded
- 4 egg large
- 1 tbs cold water
- 1 tsp fresh thyme chopped
- 1/2 tsp salt and pepper
- 30 g tasty cheese grated

Step 1Boil both potatoes in boiling lightly salted water for 5 minutes or until just tender. Drain.

Step 2Heat oil in large heavy based fry pan. Saute onions for 3-4 minutes until soft but not browned. Add cooked potato and capsicum, cook further 2-3 minutes over medium heat, stirring, until potatoes turn a golden colour.

Step 3Beat eggs with water. Add herbs and season to taste. Pour the mixture evenly over vegetables in pan, and cook over medium heat until the base is browned(2-3 minutes). Sprinkle with cheese. Set grill to high. Transfer pan to grill and cook for further 2 minutes or until the top is set and golden brown.
