How to make savoury curry mince: key tips

This is a super-convenient and easy one-pot meal. The chopped vegetables are stir-fried in a large frying pan, the mince is added, and then all the other ingredients are gradually stirred through. The pan is covered so the dish can simmer away and all of those amazing flavours and textures can party together. You may like to add a little more water to the pan if the mixture thickens too much for your liking.

Lean beef mince is used in this recipe. It keeps the fat content down so that the final result won’t be too greasy. 

Using a packet of chicken noodle instant soup mix is a sneaky way to add extra flavour to this meal, while the noodles add extra bulk and a “chow mein” factor. Any brand will do: no doubt you have your favourite!

This meal has a mild curry flavour, but feel free to add another teaspoon or two to the pan, or as much curry as you can handle!

Ingredients

  • 500g lean beef mince
  • 2 tbs olive oil
  • 1 celery stalk finely chopped
  • 1 brown onion diced
  • 1 garlic clove minced
  • 1 medium Woolworths Carrot 1kg, finely chopped
  • 1/2 red capsicum chopped large
  • 45g chicken noodle instant soup
  • 2 cups chicken stock (liquid)
  • 2 tsp curry powder
  • 1/4 cup rice uncooked
  • 1/4 cup frozen peas
  • 1/4 cup cabbage shredded

Method

  • Step 1
    Heat a large fry-pan, add olive oil.
  • Step 2
    Fry celery, onion, garlic, carrot, and capsicum for 5 minutes.

    Add mince and brown well, breaking up any lumps.
  • Step 4
    Add soup mix and stock. Stir in curry powder.
  • Step 5
    Add rice, and stir.
  • Step 6
    Add the frozen peas and cabbage. Cover pan with lid.
  • Step 7
    Cook simmering for approximately 20 minutes until the rice, peas and cabbage are cooked.
  • Step 8
    Stir occassionally, adding more water as mixture thickens.

Can I use other vegies in this savoury curry mince?

This is such a great meal for changing up the vegetables to include your favourites and those you may already have in the crisper. I would keep the staples in the recipe: the onion, celery and carrot. But then you could add grated or chopped zucchini, or corn kernels. Or you could leave out one of the veg types and add more cabbage, for example.

How long can I keep savoury curry mince?

Store your curried mince in an airtight container in the fridge for up to 4 days. It can also be frozen for up to 3 months.
