A great way to serve sausages and vegetables.

Ingredients

  • 1 tbs oil
  • 8 sausage beef mince
  • 2 bacon rashers chopped
  • 1 potato diced
  • 1 carrot chopped
  • 1 onion chopped
  • 1 clove garlic clove crushed
  • 1/2 tsp beef stock (powder)
  • 1/4 tsp Tabasco
  • 440 g canned baked beans
  • 1/4 cup parsley chopped
  • 1 cup water

Method

  • Step 1
    Cook sausages in hot oil until well browned and drain on paper towel.
  • Step 2
    Cut into slices about 2 cm thick.
  • Step 3
    Add bacon, potato, carrot, onion and garlic to the pan and cook until onion is soft.

  • Step 4
    Stir in water, stock and sauce and bring to boil. Simmer, covered until potato is tender.
  • Step 5
    Add baked beans and sausages and simmer, uncovered for 5-10 minutes or until heated through.
  • Step 6
    Stir in parsley.
Recipe Notes

If serving this to young children you may want to omit Tabasco sauce. I have varied the herbs and it is nice with thyme, as well. This recipe is perfect for the slow cooker. Cook the vegetables and sausages and add to slow cooker on low for 6-8 hours. Use beef stock powder or stock cube.
