Ingredients

  • 4 spare beef ribs
  • 100 ml extra virgin olive oil
  • 2 tsp chilli crushed hot
  • 5 tsp fresh coriander chopped
  • 1 pinch salt
  • 1 lime juiced
  • 1 drop Tabasco optional

Method

  • Step 1
    Place ribs in a large, rectangular Pyrex dish.
  • Step 2
    In a small bowl, mix all other ingredients together.
  • Step 3
    Coat ribs with oil and spice mixture.
  • Step 4
    Cover with plastic wrap and refrigerate for at least 6 hours.
  • Step 5
    Remove plastic wrap, cover dish with foil and bake in the oven at 180C for 30 minutes.
  • Step 6
    Remove foil, turn and bake for a further 30 minutes.
  • Step 7
    Remove from oven when cooked through.
Recipe Notes
Cooking times are approximate only, can be varied to suit your preference. Serve with creamy pasta or fresh, steamed vegetables. Beef ribs will expand during baking. Don't over-fill the dish.
