I have made this for about 10 years and my husband and boys love it.
Ingredients
- 1 tsp oil
- 500 g de-boned chicken breast fillet cut into strips
- 250 ml coconut milk
- 2 chicken stock cube
- 2 tbs crunchy peanut butter
- 1 tbs golden syrup
- 2 tbs sweet chilli sauce
- 2 cup snow peas
- 1 red capsicum cut into strips
Method

Step 1Heat oil in a pan, stir-fry chicken until golden brown.

Step 2Mix coconut milk with stock cubes, peanut butter, chilli sauce and golden syrup. Add to mixture with vegetables.

Step 3Simmer uncovered for 2 minutes.

Step 4If mixture thickens too much add some milk.

Step 5Serve with rice.
