Ingredients

  • 1 tsp oil
  • 500 g de-boned chicken breast fillet cut into strips
  • 250 ml coconut milk
  • 2 chicken stock cube
  • 2 tbs crunchy peanut butter
  • 1 tbs golden syrup
  • 2 tbs sweet chilli sauce
  • 2 cup snow peas
  • 1 red capsicum cut into strips

Method

  • Step 1
    Heat oil in a pan, stir-fry chicken until golden brown.
  • Step 2
    Mix coconut milk with stock cubes, peanut butter, chilli sauce and golden syrup. Add to mixture with vegetables.

    Simmer uncovered for 2 minutes.
  • Step 4
    If mixture thickens too much add some milk.
  • Step 5
    Serve with rice.
