Ingredients

  • 410g Koo guavas, seeds removed
  • 2 eggs
  • 1/2 cup sugar
  • 375ml self-raising flour
  • 150g butter
  • 5ml vanilla essence
  • 125ml milk

Method

  • Step 1
    Preheat the oven to 180 C. Grease and line a baking dish.
  • Step 2
    Cream butter and sugar until a pale yellow colour. Add eggs one at a time, mixing well after each. Add vanilla essence. Add milk. Mix well. Fold in flour.
  • Step 3
    Spread mix over baking dish. Gently push the guavas half-way into the cake mix. Drizzle with a few teaspoon of guava syrup from the can. Bake for 40 minutes.
  • Step 4
    Sprinkle with icing sugar and serve with warm custard.
Recipe Notes

It's important to remove the guava seeds before placing them into the cake mix because they don't soften in the oven.
