Ingredients

  • 4 Atlantic salmon fillet
  • 2 tsp ginger minced
  • 2 tbs reduced-salt soy sauce
  • 1 cup fresh orange juice
  • 1 lemon juiced
  • 2 tsp garlic minced
  • 2 tsp honey
  • 2 tsp butter

Method

  • Step 1
    In a saucepan, add orange juice, soy sauce, honey, lemon juice, butter, ginger and garlic.

  • Step 2
    Simmer over a low heat until the sauce thickens slightly, approximately 40 minutes.
  • Step 3
    Warm a griddle pan and add a small amount of olive oil.
  • Step 4
    Once the pan is hot add the salmon steaks.
  • Step 5
    Cook on skin side for 2 minutes, turn and cook for a further 1-2 minutes (salmon should be pink in the middle).
  • Step 6
    Rest the salmon and cover with aluminium foil.
  • Step 7
    To serve, place salmon skin side down on a plate and drizzle with the citrus jus.
Recipe Notes

This is nice served with mashed pumpkin/potato and steamed bok choy.
