Ingredients

  • 4 chicken breast fillet large halved lengthways
  • 2 egg yolks beaten

Seasoned butter

  • 1 tbs butter softened
  • 1/4 tsp chives
  • 1/4 tsp garlic powder
  • 1/4 tsp ground black pepper

Crumbing mixture

  • 1/2 cup cornflake crumbs
  • 1 tbs parmesan cheese grated
  • 1 tsp parsley chopped
  • 1 pinch salt optional

Method

  • Step 1
    In a bowl combine butter, chives, garlic powder, and pepper. Whip until mixture is well blended.
  • Step 2
    In a large bowl, mix cornflakes, parmesan, parsley and paprika. Add salt, if using.
  • Step 3
    Place a pat of seasoned butter on each chicken breast.
  • Step 4
    Roll each chicken breast up, dip into egg yolk, and then in crumb mixture.
  • Step 5
    Secure each roll with a tooth pick.
  • Step 6
    Cook on a greased oven tray, in a 180C preheated oven for 20 minutes, or until cooked through and golden.
Recipe Notes
Nice with julienned honey carrots or other vegetables of your choice.
