Serve this dish for that special occasion. It's quick and easy to make.
Ingredients
- 4 chicken breast fillet large halved lengthways
- 2 egg yolks beaten
Seasoned butter
- 1 tbs butter softened
- 1/4 tsp chives
- 1/4 tsp garlic powder
- 1/4 tsp ground black pepper
Crumbing mixture
- 1/2 cup cornflake crumbs
- 1 tbs parmesan cheese grated
- 1 tsp parsley chopped
- 1 pinch salt optional
Method

Step 1In a bowl combine butter, chives, garlic powder, and pepper. Whip until mixture is well blended.

Step 2In a large bowl, mix cornflakes, parmesan, parsley and paprika. Add salt, if using.

Step 3Place a pat of seasoned butter on each chicken breast.

Step 4Roll each chicken breast up, dip into egg yolk, and then in crumb mixture.

Step 5Secure each roll with a tooth pick.

Step 6Cook on a greased oven tray, in a 180C preheated oven for 20 minutes, or until cooked through and golden.
Recipe Notes
Nice with julienned honey carrots or other vegetables of your choice.
