Rocky road meets traditional Christmas pudding on this new spin on a classic dessert.
Ingredients
- 290g pkt dark chocolate melts
- 100g white marshmallows
- 1 cup shredded coconut
- 1 cup unsalted peanuts
- 150g glace cherries
- 50g white chocolate melts
- 3 spearmint leaf lollies
Method

Step 1Line a small 3-cup capacity pudding bowl with a few layers of plastic wrap, leaving some overhanging.

Step 2Melt dark chocolate in 30-second bursts in the microwave, stirring in between, until melted and smooth. Pour into a large bowl and add marshmallows, coconut, peanuts and glace cherries, reserving one cherry to garnish.

Step 3Gently stir to combine and pour into prepared pudding dish. Cover with overhanging plastic wrap. Refrigerate for an hour to set.

Step 4Melt white chocolate in 30-second bursts in the microwave, stirring in between, until melted and smooth. Removing pudding from the fridge and gently pull on the plastic wrap to release. Turn out onto a serving dish. Drizzle over with white chocolate and garnish with reserved cherry and spearmint leaves. When white chocolate has set, slice and serve.
Recipe Notes
Rocky road traditional uses dark chocolate, but you could substitute milk chocolate if you prefer.
You can use desiccated coconut in place of shredded.
