Ingredients

  • 1 cup almond meal
  • 1 cup coconut flour
  • 2 banana
  • 395 g (pieces in juice) canned pineapple
  • 60 ml coconut oil
  • 1/4 cup chia seeds
  • 3 egg
  • 1/2 tsp baking powder
  • 1 tbs brown sugar
  • 1 tbs honey
  • 1 tbs vanilla essence
  • 1/4 cup coconut flakes

Method

  • Step 1
    Preheat oven to 160C (fan forced). Grease loaf pan.
  • Step 2
    Mash bananas in glass bowl. Add eggs, pineapple, honey and vanilla. Stir to combine.
  • Step 3
    To same bowl, add coconut flour and almond meal, baking powder, chia seeds, brown sugar and coconut oil. Stir to combine.
  • Step 4
    Add coconut flakes to bottom of loaf pan. Spoon mixture into pan.
  • Step 5
    Bake for 60 minutes.

Recipe Notes

Serve warm with butter. If mixture looks too dry, you can add extra coconut oil.
