Healthy take on a Hummingbird cake.
Ingredients
- 1 cup almond meal
- 1 cup coconut flour
- 2 banana
- 395 g (pieces in juice) canned pineapple
- 60 ml coconut oil
- 1/4 cup chia seeds
- 3 egg
- 1/2 tsp baking powder
- 1 tbs brown sugar
- 1 tbs honey
- 1 tbs vanilla essence
- 1/4 cup coconut flakes
Method

Step 1Preheat oven to 160C (fan forced). Grease loaf pan.

Step 2Mash bananas in glass bowl. Add eggs, pineapple, honey and vanilla. Stir to combine.

Step 3To same bowl, add coconut flour and almond meal, baking powder, chia seeds, brown sugar and coconut oil. Stir to combine.

Step 4Add coconut flakes to bottom of loaf pan. Spoon mixture into pan.

Step 5Bake for 60 minutes.

Recipe Notes
Serve warm with butter. If mixture looks too dry, you can add extra coconut oil.
