The end of winter dish. You will love this one.
Ingredients
- 2 kg pork rack
- 1 pinch sea salt
- 1/4 cup olive oil
- 1/2 cup water
- 1 tbs white wine
Herb rub
- 1 tbs fresh thyme finely chopped
- 1 tbs parsley finely chopped fresh
- 1 tbs fresh sage finely chopped
- 1/2 lemon rind grated
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 pinch ground black pepper
- 1/2 tsp sea salt
Method

Step 1Preheat oven to 210C. Score the fat on pork into diamond shapes.

Step 2Mix herb rub together and rub on the pork. Drizzle olive oil over base of a baking dish.

Step 3Place pork, skin side up on rack in the dish. Pour a little water around the rack and place dish in the oven.

Step 4After 15 minutes turn heat to 150C and cook for a further 55 minutes. Top up with water if necessary.

Step 5Remove from oven and allow to rest for 10 minutes.

Step 6Deglaze the baking dish with some white wine, stirring up any residue in the pan. The pan juices make a delicious light sauce for the meat.
Recipe Notes
Nice with home made apple sauce, and steamed vegetables of your choice.
