Ingredients

  • 2 kg pork rack
  • 1 pinch sea salt
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1 tbs white wine

Herb rub

  • 1 tbs fresh thyme finely chopped
  • 1 tbs parsley finely chopped fresh
  • 1 tbs fresh sage finely chopped
  • 1/2 lemon rind grated
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1 pinch ground black pepper
  • 1/2 tsp sea salt

Method

  • Step 1
    Preheat oven to 210C. Score the fat on pork into diamond shapes.
  • Step 2
    Mix herb rub together and rub on the pork. Drizzle olive oil over base of a baking dish.
  • Step 3
    Place pork, skin side up on rack in the dish. Pour a little water around the rack and place dish in the oven.
  • Step 4
    After 15 minutes turn heat to 150C and cook for a further 55 minutes. Top up with water if necessary.
  • Step 5
    Remove from oven and allow to rest for 10 minutes.
  • Step 6
    Deglaze the baking dish with some white wine, stirring up any residue in the pan. The pan juices make a delicious light sauce for the meat.
Recipe Notes
Nice with home made apple sauce, and steamed vegetables of your choice.
