Rich Slow Cooker Chocolate Cake

Ingredients

  • 200 g Nestle* dark chocolate
  • 60 g butter chopped
  • 5 eggs separated
  • 1 tbs brandy
  • 1/2 cup ground almonds
  • 1/4 cup plain flour
  • 1/3 cup caster sugar

Chocolate ganache

  • 1/2 cup cream
  • 200 g dark chocolate

Method

  • Step 1
    Grease a 2 L pudding steamer and line base with baking paper.
  • Step 2
    Stir chocolate and butter over a low heat in a large saucepan until smooth.
  • Step 3
    Remove from heat and allow to cool for 10 minutes.
  • Step 4
    Stir in egg yolks, brandy, almond meal and sifted flour.
  • Step 5
    Beat the egg whites in a medium bowl with an electric mixer until soft peaks form, then add sugar and beat until dissolved.
  • Step 6
    Fold the egg white mixture into chocolate mixture into 2 batches.
  • Step 7
    Pour into the steamer.
  • Step 8
    Place steamer, without lid into slow cooker.
  • Step 9
    Pour enough boiling water in the slow cooker to come halfway up the side of the pudding basin.
  • Step 10
    Close and cook on high for 2 hours until cake feels firm.
  • Step 11
    Turn out immediately onto a baking paper lined cake rack.
  • Step 12
    When cold spread with ganache.
  • Step 13
    Chocolate Ganache: Bring the cream to the boil in small saucepan.
  • Step 14
    Remove from the heat, add chocolate and stir until smooth.
  • Step 15
    Allow to cool to a spreadable consistancy.

  • 1 8-cup capacity metal pudding steamer
  • 1 slow cooker
Recipe Notes

Ground almonds are the same as almond meal.

Serve with fresh berries, cream or ice-cream as desired.
