It's a simple and decadent chocolate cake.
Ingredients
- 200 g Nestle* dark chocolate
- 60 g butter chopped
- 5 eggs separated
- 1 tbs brandy
- 1/2 cup ground almonds
- 1/4 cup plain flour
- 1/3 cup caster sugar
Chocolate ganache
- 1/2 cup cream
- 200 g dark chocolate

Method

Step 1Grease a 2 L pudding steamer and line base with baking paper.

Step 2Stir chocolate and butter over a low heat in a large saucepan until smooth.

Step 3Remove from heat and allow to cool for 10 minutes.

Step 4Stir in egg yolks, brandy, almond meal and sifted flour.

Step 5Beat the egg whites in a medium bowl with an electric mixer until soft peaks form, then add sugar and beat until dissolved.

Step 6Fold the egg white mixture into chocolate mixture into 2 batches.

Step 7Pour into the steamer.

Step 8Place steamer, without lid into slow cooker.

Step 9Pour enough boiling water in the slow cooker to come halfway up the side of the pudding basin.

Step 10Close and cook on high for 2 hours until cake feels firm.

Step 11Turn out immediately onto a baking paper lined cake rack.

Step 12When cold spread with ganache.

Step 13Chocolate Ganache: Bring the cream to the boil in small saucepan.

Step 14Remove from the heat, add chocolate and stir until smooth.

Step 15Allow to cool to a spreadable consistancy.

- 1 8-cup capacity metal pudding steamer
- 1 slow cooker
Recipe Notes
Ground almonds are the same as almond meal.
Serve with fresh berries, cream or ice-cream as desired.
