Very easy, only 5 ingredients.
Ingredients
- 2 cup white rice cooked
- 4 cup frozen mixed vegetables
- 5 egg beaten
- 1/2 cup cheese grated
- 1 pinch black pepper
Method

Step 1Preheat oven to 180C.

Step 2Combine rice, vegetables and eggs.

Step 3Spoon into a 23 cm pie plate lined with baking paper.

Step 4Top with grated cheese and season with black pepper.

Step 5Bake for 35-40 minutes or until set.

- 1 23cm pie pan
Recipe Notes
I use frozen peas, corn and carrots. I also find it freezes and reheats extremely well.
