Ingredients

  • 2 cup white rice cooked
  • 4 cup frozen mixed vegetables
  • 5 egg beaten
  • 1/2 cup cheese grated
  • 1 pinch black pepper

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Combine rice, vegetables and eggs.
  • Step 3
    Spoon into a 23 cm pie plate lined with baking paper.
  • Step 4
    Top with grated cheese and season with black pepper.
  • Step 5
    Bake for 35-40 minutes or until set.

Equipment

  • 1 23cm pie pan
Recipe Notes
I use frozen peas, corn and carrots. I also find it freezes and reheats extremely well.
