French Onion Chicken Casserole

Ingredients

  • 14 chicken lovely legs
  • 1 1/2 onion halved large sliced
  • 4 garlic clove crushed
  • 2 tbs soy sauce
  • 2 cup chicken stock (liquid)
  • 800 g canned crushed tomatoes
  • 100 g French onion soup mix
  • 200 g green beans halved
  • 2 tbs cornflour

Method

  • Step 1
    Brown chicken in ovenproof casserole dish, remove.
  • Step 2
    Sauté onion and garlic, until soft.

  • Step 3
    Add stock, soy, tomatoes and soup mix, stir until blended.
  • Step 4
    Return chicken to sauce, cover, and bake at 180C for 45 minutes.
  • Step 5
    Add beans and stir. Return to oven for a further 15 minutes or until chicken is cooked through.
  • Step 6
    Mix cornflour with water into a thick paste and add to casserole to thicken.
  • Step 7
    Serve on rice.
Recipe Notes

This recipe can be cooked in a slow cooker, using the same methods with a longer cooking time, or on the stove top, or deep electric frying pan. I have also stripped the chicken from the bones before serving and placed meat back into the sauce. The recipe can be halved.
