Tasty winter chicken casserole for the whole family.
Ingredients
- 14 chicken lovely legs
- 1 1/2 onion halved large sliced
- 4 garlic clove crushed
- 2 tbs soy sauce
- 2 cup chicken stock (liquid)
- 800 g canned crushed tomatoes
- 100 g French onion soup mix
- 200 g green beans halved
- 2 tbs cornflour
Method

Step 1Brown chicken in ovenproof casserole dish, remove.

Step 2Sauté onion and garlic, until soft.

Step 3Add stock, soy, tomatoes and soup mix, stir until blended.

Step 4Return chicken to sauce, cover, and bake at 180C for 45 minutes.

Step 5Add beans and stir. Return to oven for a further 15 minutes or until chicken is cooked through.

Step 6Mix cornflour with water into a thick paste and add to casserole to thicken.

Step 7Serve on rice.
Recipe Notes
This recipe can be cooked in a slow cooker, using the same methods with a longer cooking time, or on the stove top, or deep electric frying pan. I have also stripped the chicken from the bones before serving and placed meat back into the sauce. The recipe can be halved.
