A light, healthy and low fat salad perfect for summer lunches.
Ingredients
- 4 cups rice cooked cooled drained
- 3 carrots grated
- 1 red onion finely chopped
- 3 spring onions thinly sliced
- 275 g canned corn kernels drained
- 425 g canned tuna in springwater drained flaked
- 250 ml Paul Newman's Own honey mustard salad dressing

Step 1Place all ingredients into a large bowl and mix well.
Recipe Notes
So many ways to vary this recipe to suit individual tastes. I have used salmon instead of tuna. Other ingredients that can be added are: asparagus cuts/tips, creamed corn to make a more moist salad.
I use a mixture of brown, basmati and wild rice to give different tastes and textures.
I use Paul Newman's light honey mustard dressing.
