Ingredients

  • 500 g chicken thighs
  • 3/4 cup plain flour
  • 8 tsp salt and pepper
  • 1/2 cup olive oil to coat
  • 1 oil spray

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    Place chicken thighs in a plastic bag. Pour over enough oil to coat chicken pieces.
  • Step 3
    Mix flour, salt and pepper in a bowl.
  • Step 4
    Pour flour mix into the bag with the chicken and toss to coat.
  • Step 5
    Spray baking tray with oil and place chicken on tray and bake for approximately 20 minutes.
  • Step 6
    Serve with mashed potato and garlic broccoli.
Recipe Notes
The salt and flour are rough estimates for this recipe as people prefer more or less to taste. My advice is do it a few times until you get the right amount for your liking. I have made this with chicken breast but find the thigh is much juicier and more flavour some. Cut the chicken into smaller pieces to make nuggets for the kids. They love it!
