Ingredients

  • 1 egg
  • 1 1/2 cup rice cooked
  • 1/2 cup cheese grated
  • 1 tbs parmesan cheese
  • 1/3 cup pizza sauce
  • 1/2 cup pepperoni
  • 1/4 cup green capsicum chopped
  • 1/2 onion thinly sliced
  • 1 cup tasty cheese
  • 1/2 cup capsicum thinly sliced

Method

  • Step 1
    Beat egg with fork in a small bowl.
  • Step 2
    Add rice and first amount of cheese and Parmesan cheese. Stir until combined. Spread in greased 22 cm pie plate, building up the side slightly. Pack down well.
  • Step 3
    Bake in hot oven for approximately 10 minutes, until edge is starting to brown.
  • Step 4
    Spread sauce over crust, layer ham, capsicums and onion over sauce.
  • Step 5
    Scatter second amount of cheese and slivered capsicum over the top.
  • Step 6
    Bake uncovered in moderate oven for about 10 minutes until edge is brown and cheese is melted.
  • Step 7
    Let stand in pie plate for 5 minutes. Cut into 4 wedges.
Recipe Notes
I make this for a different dish at lunch, the topping can be changed to your tastes, even the sauce to BBQ flavour and bacon. Ham can be used.
