A cheese covered pizza using left over rice. Easy to make for unexpected visitors.
Ingredients
- 1 egg
- 1 1/2 cup rice cooked
- 1/2 cup cheese grated
- 1 tbs parmesan cheese
- 1/3 cup pizza sauce
- 1/2 cup pepperoni
- 1/4 cup green capsicum chopped
- 1/2 onion thinly sliced
- 1 cup tasty cheese
- 1/2 cup capsicum thinly sliced
Method

Step 1Beat egg with fork in a small bowl.

Step 2Add rice and first amount of cheese and Parmesan cheese. Stir until combined. Spread in greased 22 cm pie plate, building up the side slightly. Pack down well.

Step 3Bake in hot oven for approximately 10 minutes, until edge is starting to brown.

Step 4Spread sauce over crust, layer ham, capsicums and onion over sauce.

Step 5Scatter second amount of cheese and slivered capsicum over the top.

Step 6Bake uncovered in moderate oven for about 10 minutes until edge is brown and cheese is melted.

Step 7Let stand in pie plate for 5 minutes. Cut into 4 wedges.
Recipe Notes
I make this for a different dish at lunch, the topping can be changed to your tastes, even the sauce to BBQ flavour and bacon. Ham can be used.
