Lovely balls of rice - these are very nice, the kids will love them.
Ingredients
- 1 cup rice cooked
- 2 egg beaten
- 3 tbs sugar
- 1/2 tsp vanilla essence
- 1/2 cup plain flour
- 1 tbs baking powder
- 1 pinch salt
- 1/4 cup desiccated coconut
- 500 ml vegetable oil
- 2 tbs icing sugar
Method

Step 1Place rice, sugar eggs and vanilla in a bowl and mix well.

Step 2Sift the flour, baking powder and salt, then stir into rice mixture.

Step 3Stir in the coconut.

Step 4Heat the oil in a deep fryer to 180C.

Step 5Drop tablespoons of mixture into oil one at a time, and deep fry until golden brown. Drain on kitchen towel.

Step 6Transfer to serving dish, then sprinkle with icing sugar.

Step 7Serve hot.
