Ingredients

  • 1 cup rice cooked
  • 2 egg beaten
  • 3 tbs sugar
  • 1/2 tsp vanilla essence
  • 1/2 cup plain flour
  • 1 tbs baking powder
  • 1 pinch salt
  • 1/4 cup desiccated coconut
  • 500 ml vegetable oil
  • 2 tbs icing sugar

Method

  • Step 1
    Place rice, sugar eggs and vanilla in a bowl and mix well.
  • Step 2
    Sift the flour, baking powder and salt, then stir into rice mixture.
  • Step 3
    Stir in the coconut.
  • Step 4
    Heat the oil in a deep fryer to 180C.
  • Step 5
    Drop tablespoons of mixture into oil one at a time, and deep fry until golden brown. Drain on kitchen towel.
  • Step 6
    Transfer to serving dish, then sprinkle with icing sugar.
  • Step 7
    Serve hot.
