Two different delicious icings for a cake or sponge.
Ingredients
- 4 tbs raspberry jam
- 1 egg whites beaten well
Black jam icing
- 1/2 cup blackberry jam
- 1 egg whites
- 1 pinch salt
- 1/2 cup whipped cream
Method

Step 1Red jam icing: Slowly heat and boil jam for 1 minute.

Step 2Pour over stiffly beaten egg white and beat until stiff.

Step 3Pour immediately on a cake or sponge.

Step 4Black jam icing: Warm black jam and beat in egg white and a pinch of salt until stiff.

Step 5Allow to cool and then fold in whipped cream.
Recipe Notes
You can use any red jam or black jam. These are very quick and tasty icings.
