Ingredients

  • 4 tbs raspberry jam
  • 1 egg whites beaten well

Black jam icing

  • 1/2 cup blackberry jam
  • 1 egg whites
  • 1 pinch salt
  • 1/2 cup whipped cream

Method

  • Step 1
    Red jam icing: Slowly heat and boil jam for 1 minute.
  • Step 2
    Pour over stiffly beaten egg white and beat until stiff.
  • Step 3
    Pour immediately on a cake or sponge.
  • Step 4
    Black jam icing: Warm black jam and beat in egg white and a pinch of salt until stiff.
  • Step 5
    Allow to cool and then fold in whipped cream.
Recipe Notes
You can use any red jam or black jam. These are very quick and tasty icings.
