Ingredients

  • 250 g copha room temperature
  • 300 g plain flour
  • 20 g dry yeast
  • 1 tsp caster sugar
  • 1 tbs milk
  • 1 cup icing sugar
  • 16 g vanilla sugar

Method

  • Step 1
    Preheat oven to 170C. Lightly grease and line 2 baking trays.
  • Step 2
    In a small bowl, dissolve yeast with sugar and milk.
  • Step 3
    Sift flour into a bowl and add copha and yeast combined to form dough. Don't use an electric mixer as the dough will become too soft.
  • Step 4
    Make a ball and then put into a deep saucepan and cover with cold water. Leave the dough in water for 2 hours.
  • Step 5
    Remove dough from water and transfer to a bowl. Fill a piping bag with mixture using a tablespoon. Pipe onto a lightly greased and lined baking trays to form round cookies. Bake in preheated oven for about 15 minutes.
  • Step 6
    Mix icing sugar with vanilla sugar and thoroughly dust biscuits - this brings out the beautiful taste.

Recipe Notes

Grate the copha to melt it faster.

The cookies are very soft and fragile - so they break easily - these are the ones I use for 'taste testing'.

Use a good quality piping bag.

It is essential to coat the cookies with vanilla icing sugar as the dough itself is not particularly sweet.
