Quick mango chicken curry

This Fijian Indian inspired dish has a sweet, mild flavour that is a favourite with my kids. Serve it with papadums - or even better, naan bread - to mop up the sauce. - Serina Bird

Ingredients

  • 1 medium onion, diced
  • 500g chicken breasts (around 2 breasts)
  • 1 tsb oil
  • 100g korma curry paste
  • 425g tin of mangos (in juice)
  • 100ml sour cream

Method

  • Step 1
    Finely dice the onion and cut the chicken breast into bite sized pieces.
  • Step 2
    Puree the mangos and juice in a blender.
  • Step 3
    In a large pan, sauté the onion in oil for a few minutes until translucent.
  • Step 4
    Add the diced chicken breasts and stir until cooked through.
  • Step 5
    Add in the korma paste and stir to coat the chicken.
  • Step 6
    Add the pureed mangos and juice to the pan with the chicken cook for around 10 minutes on a low heat.
  • Step 7
    Shortly before serving, stir in the sour cream.
  • Step 8
    Serve with basmati rice, pappadums and/or naan bread.
