This Fijian Indian inspired dish has a sweet, mild flavour that is a favourite with my kids. Serve it with papadums - or even better, naan bread - to mop up the sauce.
Ingredients
- 1 medium onion, diced
- 500g chicken breasts (around 2 breasts)
- 1 tsb oil
- 100g korma curry paste
- 425g tin of mangos (in juice)
- 100ml sour cream
Method

Step 1Finely dice the onion and cut the chicken breast into bite sized pieces.

Step 2Puree the mangos and juice in a blender.

Step 3In a large pan, sauté the onion in oil for a few minutes until translucent.

Step 4Add the diced chicken breasts and stir until cooked through.

Step 5Add in the korma paste and stir to coat the chicken.

Step 6Add the pureed mangos and juice to the pan with the chicken cook for around 10 minutes on a low heat.

Step 7Shortly before serving, stir in the sour cream.

Step 8Serve with basmati rice, pappadums and/or naan bread.
