A fresh tasting, easily prepared soup.
Ingredients
- 1 tbs oil
- 1 onion finely chopped large
- 1 bacon rashers finely chopped
- 800 g tomato chopped
- 125 g lentils
- 2 cups beef stock (liquid)
- 1 pinch ground black pepper *to taste
- 1/2 cup basil leaves, removed, torn, to taste
- 1 carrot grated medium
Method

Step 1Sauté onion and bacon in oil.

Step 2Add carrot and tomatoes.

Step 3Rinse lentils and add to vegetables.

Step 4Stir in stock.

Step 5Bring to the boil and simmer for 20 minutes or until lentils are tender.

Step 6Remove from heat and add basil.

Step 7Serve garnished with basil leaves.
Recipe Notes
Soup can be pureed if desired.
