Ingredients

  • 1 tbs oil
  • 1 onion finely chopped large
  • 1 bacon rashers finely chopped
  • 800 g tomato chopped
  • 125 g lentils
  • 2 cups beef stock (liquid)
  • 1 pinch ground black pepper *to taste
  • 1/2 cup basil leaves, removed, torn, to taste
  • 1 carrot grated medium

Method

  • Step 1
    Sauté onion and bacon in oil.
    Fresh Tomato and Lentil Soup
  • Step 2
    Add carrot and tomatoes.
  • Step 3
    Rinse lentils and add to vegetables.
  • Step 4
    Stir in stock.
  • Step 5
    Bring to the boil and simmer for 20 minutes or until lentils are tender.
  • Step 6
    Remove from heat and add basil.
  • Step 7
    Serve garnished with basil leaves.
Recipe Notes

Soup can be pureed if desired.
