Simple, cheap to make, delicious and filling – what more could you want from a light meal? Oh, that’s right, it’s also packed with vegies, making it good for you, too! This easy quiche recipe is definitely a keeper.

How to make easy quiche: key tips

How easy is this crustless quiche? All the ingredients are simply mixed together, poured into a pie dish and baked. The onion does need to be cooked a little first, though. So, just place it in an oiled pan over medium heat and cook, stirring occasionally, for 3-5 minutes or until softened.

Bake your quiche until firm and golden, then cut into wedges, to serve.

Key ingredients in this easy quiche recipe 

The onion really brings the flavour in a quiche, but if you don’t have the time to soften it in a frying pan first, swap it out for chopped green shallot.

Ham, zucchini and corn are the cook’s choice for this recipe, but feel free to mix and match whatever cold cuts and vegies you have at home (see the below notes for more ideas). 

The egg, cheese and milk are the glue that holds everything together in this quiche. Opt for full-fat cheese and milk for the most creamy and flavoursome quiche.

Ingredients

  • 4 egg
  • 125 g cheese grated
  • 1/2 cup self-raising flour
  • 125g ham (deli) chopped
  • 1 onion diced partially cooked
  • 1 1/2 cup milk
  • 1/2 cup zucchini grated
  • 1/2 cup corn cob kernels *to taste

Method

  • Step 1
    Mix ingredients together and pour into a greased quiche or pie dish.

    Bake at 180C for approximately 40 minutes.

  • Chopped fresh mushrooms (any kind will do)
  • Chopped fresh long red chilli

  • Feta or Swiss cheese
  • Sliced or chopped red onion

Can I make smaller easy quiches? 

You can pour your egg mixture into greased large muffin pan holes. Bake for about 25 minutes or until just set. Cool for 10 minutes in the pan before turning out and serving warm or at room temperature. These are great for a light lunch with salad, lunch boxes or barbecues.
