These no-cook chocolate truffles are spiked with dark rum for an adults-only treat. - alicea67

Ingredients

  • 200g pkt dried pineapple pieces
  • 1/3 cup desiccated coconut
  • 1 tbs dark rum
  • 180g pkt dark chocolate, chopped

Method

  • Step 1
    Line a plate with baking paper.
  • Step 2
    Process the pineapple in a food processor until very finely chopped. Transfer to a bowl. Stir in the coconut and rum until well combined.
  • Step 3
    Roll 2 tsp of the pineapple mixture into a ball. Transfer to the lined plate.
  • Step 4
    Place the chocolate in a heatproof bowl over a saucepan of simmering water, making sure the base of the bowl doesn't touch the water. Stir until chocolate has melted. Remove the bowl from the pan.
  • Step 5
    Working one at a time, use two forks to dip a ball into the melted chocolate. Allow excess chocolate to drain back into the bowl. Return to the lined plate. Repeat with the remaining balls. Place in the fridge for 2 hours or until the chocolate has set.
