A solid muffin that won't leave you hungry! They keep really well in the freezer. This mixture makes quite a dense muffin. I keep a constant supply of these in the freezer and send my husband to work with one every day. He says they are his turbo muffins. Great for afternoon tea when you need a bit of a pick me up. You won't be hungry again in half an hours time! - Michelle050403

Ingredients

  • 200 g self-raising flour
  • 100 g butter softened
  • 150 g brown sugar
  • 2 eggs
  • 4 bananas mashed
  • 1/2 cup walnuts chopped
  • 1 cup seed mix

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Rub butter into flour until combined, then stir in all other ingredients.
  • Step 3
    Mix well.
  • Step 4
    Place mixture into greased muffin trays.
  • Step 5
    Bake for 20-30 minutes.

Equipment

  • 1 12-hole muffin pan
Recipe Notes

Use seed mix i.e. a combination of pepitas, sunflower seeds and pine nuts.
