This is the recipe for a perfect pumpkin soup.
Ingredients
- 1 L water
- 500 g pumpkin
- 1 baby cauliflower
- 2 onion chopped
- 2 carrot
- 4 potato
- 4 squash
- 200 g red split lentils
- 150 g lean pork loin cutlets
- 1 pinch salt and pepper
Method

Step 1Cut all the vegetables into small pieces.

Step 2Put all the ingredients in a large pot.

Step 3Add the water (make sure that the water level in the pot is approximately 5 cm lower than the level of the vegetables).

Step 4Cook on moderate heat for about 1½ hours until all the vegetables are well cooked.

Step 5Process to a puree using a food processor or a blender.

Step 6Serve with grated parmesan.
