A nice light meal for all occasions.
Ingredients
- 5 potato medium peeled quartered
- 30 g butter
- 1 tsp dried rosemary
- 3 egg separated
- 4 bacon rashers cooked diced
- 1 red capsicum diced
- 1 onion diced small
- 2 shallots sliced
- 1/2 cup tasty cheese grated
- 1 pinch pepper
Method

Step 1Boil potatoes until tender, drain and mash.

Step 2Add butter and rosemary, and allow to cool for 10 minutes.

Step 3Add egg yolks, bacon, capsicum, onion, shallots, pepper and cheese, and combine well.

Step 4Fold in firmly beaten egg whites.

Step 5Spoon into a greased pie dish and bake at 180C for 40 minutes or until golden brown.
