Ingredients

  • 5 potato medium peeled quartered
  • 30 g butter
  • 1 tsp dried rosemary
  • 3 egg separated
  • 4 bacon rashers cooked diced
  • 1 red capsicum diced
  • 1 onion diced small
  • 2 shallots sliced
  • 1/2 cup tasty cheese grated
  • 1 pinch pepper

Method

  • Step 1
    Boil potatoes until tender, drain and mash.
  • Step 2
    Add butter and rosemary, and allow to cool for 10 minutes.
  • Step 3
    Add egg yolks, bacon, capsicum, onion, shallots, pepper and cheese, and combine well.
  • Step 4
    Fold in firmly beaten egg whites.
  • Step 5
    Spoon into a greased pie dish and bake at 180C for 40 minutes or until golden brown.
