Gives the potato soup a totally different flavour.
Ingredients
- 3 cup water
- 2 vegetable stock cube
- 2 potato large peeled sliced
- 3 onion sliced
- 2 avocado peeled ripe sliced
- 2 tsp lemon juice
- 300 ml cream
- 2 tsp nutmeg
Method

Step 1Combine water, crumbled stock cubes, potatoes and onions in a pan and bring to the boil.

Step 2Lower heat and simmer for 30 minutes. Blend until smooth.

Step 3Blend or puree avocados with lemon juice and ½ cup of potato liquid.

Step 4Heat both soups in separate pans, stir cream into avocado soup.

Step 5Pour the soups in separate jugs. Holding a jug in each hand, pour soups into individual bowls at the same time, then gently swirl with a knife.

Step 6Sprinkle with nutmeg.
Recipe Notes
You can replace avocado soup with 2½ cups carrot soup.
