Ingredients

  • 750 g lamb mince
  • 2 tbs olive oil
  • 1 brown onion finely chopped
  • 200 g Swiss brown mushrooms quartered
  • 2 tbs ground cumin
  • 2 tsp smoked paprika
  • 2 tsp chilli flakes *optional
  • 2 tbs tomato paste heaped
  • 2 long red chillies thinly sliced
  • 1 1/2 tbs brown sugar
  • 400 g canned diced tomatoes
  • 400 g white beans drained rinsed
  • 2 tbs coriander finely chopped *to serve *extra
  • 2 cups white rice *to serve
  • 2 handfuls snake beans *to serve

Method

  • Step 1
    Heat oil in a large heavy-based saucepan. Add onion, mushrooms and spices. Cook, stirring occasionally for 5 minutes or until onions and mushrooms have softened.
  • Step 2
    Crumble in lamb mince and cook for 7 minutes or until mince is browned, breaking up the mince with a wooden spoon. Stir in paste, chilli, sugar, tomatoes and 125ml (1/2 cup) water. Bring to a simmer and cook, stirring occasionally for 25 minutes or until lamb mixture has thickened slightly. Stir in beans and coriander and season to taste.
  • Step 3
    To serve, divide steamed rice and snake beans among four plates. Top with chilli lamb and scatter with extra coriander leaves.
Recipe Notes

If you like, substitute chilli with red capsicum and the Swiss brown mushrooms with button mushrooms.

This is a great snack for kids. Served the next day cold, rolled up on flat bread with chopped tomatoes and lettuce.
