Ingredients

  • 500g diced pork
  • 1 garlic clove crushed
  • 2cm ginger chopped
  • 1 tbs curry powder
  • 2 tbs oil
  • 2 eggs beaten
  • 200g 2-minute noodles
  • 1 onion diced large
  • 1 red capsicum small sliced
  • 1 cup frozen peas
  • 1 tbs soy sauce
  • 1/2 cup spring onions chopped

Method

  • Step 1
    Season pork with garlic, ginger and curry powder.

  • Step 2
    Beat eggs and fry, like a pancake, with a little oil, remove and chop roughly.
  • Step 3
    Cook noodles as directed and drain.
  • Step 4
    Saute onion and capsicum in part of the oil, thaw green peas under hot water, drain and saute for 1 minute. Remove vegetables from pan.
  • Step 5
    Stir-fry pork in remaining oil for approximately 5 minutes, add noodles and toss together, mix in vegetables and reheat.
  • Step 6
    Add soy sauce and serve with egg and chopped shallots.
