Good for a quick 10-minute meal and the kids will love it.
Ingredients
- 500g diced pork
- 1 garlic clove crushed
- 2cm ginger chopped
- 1 tbs curry powder
- 2 tbs oil
- 2 eggs beaten
- 200g 2-minute noodles
- 1 onion diced large
- 1 red capsicum small sliced
- 1 cup frozen peas
- 1 tbs soy sauce
- 1/2 cup spring onions chopped
Method

Step 1Season pork with garlic, ginger and curry powder.

Step 2Beat eggs and fry, like a pancake, with a little oil, remove and chop roughly.

Step 3Cook noodles as directed and drain.

Step 4Saute onion and capsicum in part of the oil, thaw green peas under hot water, drain and saute for 1 minute. Remove vegetables from pan.

Step 5Stir-fry pork in remaining oil for approximately 5 minutes, add noodles and toss together, mix in vegetables and reheat.

Step 6Add soy sauce and serve with egg and chopped shallots.
