A great way to use up leftover roast pork!
Ingredients
- 3 cup roast pork, cold
- 1 packet taco seasoning
- 1 can Mexican beans
- 1/4 cup water
- 1/2 cos lettuce shredded
- 1/2 red onion sliced
- 1 bunch coriander coarsely chopped
- 1 lime cut into wedges
- 1 jar taco sauce
- 1/2 cup sour cream
- 1 cup guacamole
- 1 tsp olive oil
- 1 packet tortillas
Method

Step 1Fry pork lightly in a little olive oil. Add taco seasoning and stir. Add beans and water and stir until thickened.

Step 2Warm tortillas as per tortillas instructions and add top with pork mixture

Step 3Serve with lettuce, onion, coriander, taco sauce, guacamole and lime juice to taste

Budget style. I used black and gold taco seasoning and sour cream and obela guacamole
