Ingredients

Base

  • 1 cup macadamias
  • 1/4 cup coconut
  • 6 medjool dates
  • 1 g sea salt

Cheesecake Filling

  • 2 cup raw cashews soaked
  • 1/2 cup raw organic honey
  • 1/2 cup filtered water
  • 3 tbs lemon juice
  • 1 tsp vanilla essence
  • 1/4 cup coconut oil melted
  • 2 tbs lecithin powder

Muddled Berry Jam

  • 1 cup frozen raspberries
  • 1 tbs raw organic honey
  • 2 tbs chia seeds

Method

  • Step 1
    For the base place all ingredients in food processor. Process until mixture comes together. Press into ramekins and place in fridge
  • Step 2
    For filling: place first 5 ingredients into the blender. Blend until smooth .Add lecithin and coconut oil,and blend until just mixed. Pour onto the base and place in freezer.
  • Step 3
    For berry jam,muddle the 3 ingredients together with a fork. Then pour on top of cheesecake.
