Great for breakfast or a snack.
Ingredients
- 300 g natural yoghurt
- 30 g wholemeal plain flour
- 1 egg lightly beaten
- 1/2 tsp bicarbonate of soda
- 45 g polenta
- 1 tbs butter
Method

Step 1Mix together all of the ingredients, except the butter, in the order listed, until well combined.

Step 2Heat a frypan over medium heat and lightly coat with a little butter.

Step 3Drop a tablespoon of the batter into the pan and fry for about 2 minutes, or until golden, on the first side, and 1 minute on the second side.

Step 4Continue until all the batter has been used.

Called "Days out Cakes", in a recipe book put together by parents at Riverside Preschool at Henley NSW, Australia. A nice change for breakfast in place of pancakes or toast.
