Ingredients

  • 300 g natural yoghurt
  • 30 g wholemeal plain flour
  • 1 egg lightly beaten
  • 1/2 tsp bicarbonate of soda
  • 45 g polenta
  • 1 tbs butter

Method

  • Step 1
    Mix together all of the ingredients, except the butter, in the order listed, until well combined.
  • Step 2
    Heat a frypan over medium heat and lightly coat with a little butter.
  • Step 3
    Drop a tablespoon of the batter into the pan and fry for about 2 minutes, or until golden, on the first side, and 1 minute on the second side.
  • Step 4
    Continue until all the batter has been used.
Recipe Notes
Called "Days out Cakes", in a recipe book put together by parents at Riverside Preschool at Henley NSW, Australia. A nice change for breakfast in place of pancakes or toast.
