Great for dinner parties, this is a restaurant quality cake that's very simple to make.
Ingredients
- 2 oranges large
- 5 eggs large
- 250 g raw sugar
- 250 g ground almonds
- 1 tsp baking powder
- 2 tsp orange liqueur optional
- 1/2 cup icing sugar *to decorate
Method

Step 1Place oranges in saucepan and boil for two hours, topping up water as necessary.

Step 2Allow to cool, then cut into pieces, place in a blender and blend until smooth (pips and peel can be included).

Step 3Preheat oven to 200C and line a 20cm round cake tin.

Step 4Beat eggs and sugar together.

Step 5Mix in baking powder, stir in the pureed oranges and gently fold in almond meal.

Step 6Mix in orange liqueur if using, then pour mixture into tin.

Step 7Bake for 55 minutes, or until knife inserted in centre comes out clean. Allow cake to cool in pan before removing.

Step 8Dust with icing sugar prior to serving.
Recipe Notes
Cut into small slices as this is very rich.
I often serve with a bit of whipped cream and fresh strawberries on the side.
