Ingredients

  • 3 kg dark plum ripe
  • 1 1/2 L water
  • 4 cloves garlic roughly chopped
  • 1/2 cup Ezy-sauce
  • 6 tsp salt
  • 1 1/2 kg sugar

Method

  • Step 1
    Place plums, garlic and water into a large saucepan.
  • Step 2
    Bring to a boil stirring occasionally, until stones have separated.
  • Step 3
    Push through a colander over a large bowl and remove stones.
  • Step 4
    Return pulp and liquid to original, rinsed saucepan.
  • Step 5
    Add Ezy sauce, sugar and salt.
  • Step 6
    Boil gently for approximately 2 hours or until sauce thickens.
  • Step 7
    Pour into hot, sterilised bottles and seal.
