Made with cake mix, apple and sour cream. I like this as it's not too sweet.
Ingredients
- 340 g buttercake cake mix
- 1 cup coconut
- 125 g butter melted
- 825 g canned pie apple
- 300 g sour cream
- 1/2 tsp lemon rind, finely grated
- 1/2 tsp ground cinnamon
- 2 eggs lightly beaten
Method

Step 1Grease a 20 x 30 cm lamington pan and line with paper .

Step 2Mix coconut, butter and cake mix together and press into cake pan.

Step 3Bake at 180C for 15 minutes or until light brown. Cool slightly.

Step 4Spread apples over the base.

Step 5Whisk sour cream, rind and eggs in a bowl until smooth and pour mixture over apples.

Step 6Continue to bake for 30 minutes.

Step 7Refrigerate until cooled and then cut into squares and sprinkle with cinnamon.
